Banana Bites Recipe – A Flourless Protein Cookie

If you’re anything like me, you might not always have time to eat breakfast in the morning. Or maybe you need a mid-afternoon “pick me up” snack that is packed with protein. This recipe is perfect for you then.

I discovered these adorable, tasty little treats at a local (non-franchised) coffee shop. My favorite combination is a smooth macchiato along with this delectable, flourless cookie. But when I can’t make it to the coffee shop, my kitchen is the next best thing.

Anyone that knows me will tell you that I don’t bake. In fact, I hate baking. Following recipes is not my style. So I’ve managed to mix this recipe up a bit and still make it work. Boom. Enjoy.

Serving Size – 14 to 16 cookies
Prep time – 5-10 minutes
Cook time – 12-16 minutes (depending on your oven)

Flourless Banana Bites

  • 2-1/2 cups raw organic oats
  • 3 ripe bananas
  • 1 cup chunky peanut butter
  • 2 TBSP organic maple syrup
  • 1/2 TBSP cinnamon and sugar combo
  • Dash of salt
  • Optional: 1/2 cup of pecans and/or craisins

Instructions: Start by breaking up the banana’s into a large bowl. Add the peanut butter. Microwave for 2 minutes. Stir vigorously until the banana and peanut butter is combined. Add the oats, syrup, cinnamon/sugar, salt and stir. The “dough” should be pliable enough to form a ball and should not be runny. Add more oats if your dough is runny.

Use a tablespoon to form balls an inch a part on a baking sheet. These do not rise. Bake in the oven at 425 degrees for 12 to 16 minutes (depending on your oven). The banana bites will appear firm and slightly browned when complete.

Serve and enjoy.

You can make the recipe vegan by using a vegan peanut butter, instead of regular. I eat too much peanut butter at home to be able to afford the vegan kind.

This is one of my favorite treats to make at home right now. I can grab it as I’m running out the door for work or an appointment. Also, when Endo starts giving me the 2 o’clock afternoon sleepy’s, I can grab a Banana Bite and instantly feel energized.
